Taste: Savory / Sweet

If I could eat only one type of canned seafood for the rest of my life it would probably be brisling sardines, also known as sprats. The texture is perfect to eat on its own, on a cracker, smashed on toast, for breakfast, for dinner… I could go on. There are so many different types of canned brisling sardines, and some of them are more unique than others.
Fangst Brisling no.1 is refreshingly floral in an awesome wave. 10-12 tiny sprats are packed in rapeseed oil with chamomile and heather (a flowering herb that tastes a little like lavender and a little like chamomile). Upon opening this tin you’re met with a strong whiff of smoke and flowers as though you’re deep in a nordic field (near a smokehouse, surely). The deep smoke flavor jives well with these herbs and creates an almost sweet taste I just couldn’t get enough of. This fish is soft, like most sprats, and has its skin and tails on.
You already know what I’m gonna say. Pull out your box of club crackers and slap one of these bad boys on. Club crackers have the slightest, just-right amount of sugar to play up the sweet floral aroma of this fish. Pair them with a pickled vegetable like carrot or radish to get a little salty-sweet sensation going. Or, as always, you can eat these tasty treats right out of the tin. The flavor here is incredible and you’re going to want to keep going back for more.
I can’t wait to get this tin again! I got this at Ends Meat in NYC, and you can likely find it at your local tinned fish shop. If there isn’t a seafood slinger around you, don’t fret! You can snag this tin online at Rainbow Tomatoes Garden.
