After our last experience with smoked salmon, I was left pretty disappointed. How could someone desecrate smoked salmon that way? I frantically searched for a better tin and came across Wildfish Cannery. All of their fish is sustainably caught in Alaska and hand-packed. Naturally, I had to try it, and I’m glad I did. Finally: reverence for smoked salmon.
Wildfish Cannery Smoked King Salmon is a delectably juicy tin. There are a few salmon steaks packed surprisingly without water or oil but with salt, cane sugar, black pepper, and smoke. Being packed in its own juices with its skin-on preserves the moisture and just-caught fresh flavor. It’s delightfully fatty and savory - not a single flake of this fish is dry. This tin tastes just like the salmon sold at the smoked fish shop near my parents’ cottage in Up North, Michigan - that is to say, like home.
I would happily eat this smoked salmon on its own right out of the can, and truly, I’d recommend eating it that way. The flavor is just too good! Now, if you do want to make this a meal, it’s delicious on a piece of toast with butter or cream cheese. Either of these will highlight the savoriness nicely. You can also enjoy this tin Emily Mariko style over rice with kimchi, avocado, and seaweed.
I’m thrilled to finally recommend you a delicious tin of smoked salmon. The price point here is pretty high, but I’d say it’s worth it for the experience. This smoked king salmon is fit for a king, and you can find it at Wildfish Cannery’s website or you may find it in person at your local tinned fish vendor.
