Iโm always thrilled when I can use the entirety of a can of sardines. Most of the time, Iโll pour off the oil because it gets in the way, but I hate being wasteful. The oil that your tinned seafood is packed in is usually delicious - itโs been infused with savory, fishy flavor, and sometimes it comes with a little extra seasoning. Itโs perfect for dipping bread into, pouring over pasta, or in the case of this tin, blending into a tasty salad dressing.

There are about 8-12 tasty brisling sardines packed in extra virgin olive oil, with white wine vinegar and a bunch of large, zesty capers. The sardines are just as youโd expect from King Oscar - nicely tender, with their skin and tails on. The vinegar is tangy, fresh, and not overwhelming at all. The capers taste pleasantly mild - they arenโt as piquant as the pickled jars you can get at the grocery store. The ingredients here jive together as a well-balanced tin.
Do not throw this oil away! Youโve got the ingredients for a delicious salad dressing ready to go! You can use this oil just as it is, or you can mix it with a bit of mustard, honey, and cracked pepper for my go-to salad dressing. Pour it over some fresh salad greens, top with a few sardines, and youโve got lunch! Alternatively, pair these sardines with some plain potato chips and drizzle some oil on top for a DIY salt and vinegar chip.
